Korean Beef Noodle Bowl with Dijon Sesame Dressing

Makes 2 servings


Ingredients for noodle bowl:

½ zucchini, sliced 

½ carrot, julienned 

1 head of bok toy 

1/4 medium sized red onion, sliced 

1 stem green onion, sliced 

2 oz. dry soba noodles 

1 tsp. chili powder 

3 Tbsp sesame oil, for cooking


Ingredients for beef marinade:

1 ½ lb. chuck beef steak 

1/4 cup soy sauce 

1/3 cup rice wine 

1/4 cup Ecotierra Organic Toasted Sesame Oil 

2 cloves garlic, finely minced 

Pinch of Salt 

Pinch of freshly ground Pepper


Ingredients for dijon sesame dressing

2 Tbsp dijon mustard 

1 Tbsp Ecotierra Organic Toasted Sesame Oil 

1 tsp freshly ground pepper 

1 tsp granulated sugar 

2 tsp rice wine vinegar 

Water, to thin out if its too thick

HOW TO MARINADE BEEF STEAK

1. Combine all ingredients in a bowl or a ziplock bag and marinade in the refrigerator for at least 1 hour.


HOW TO MAKE DIJON SESAME DRESSING

1. In a bowl, add all ingredients and whisk until combined. Set aside for noodle bowl.


HOW TO MAKE NOODLE BOWL

1. On medium heat, place zucchini in a nonstick pan and sauté with a dash of light sesame oil for 3 minutes. Repeat this step for the carrots. Remove zucchini and carrots from pan and set aside zucchini and carrots for later use.

2. In the same pan, add the bok choy, dash of light sesame oil, chili powder, salt + pepper and sauté until bok choy is tender. Remove from pan and set aside. 

3. In a separate pot, bring water to a boil and cook soba noodles until al dente. Once cooked, strain and put the noodles in a ice bath to stop cooking process. Strain and set aside. 

4. Heat another pan on high heat, cook marinated steak. For medium rare, cook the steak on one side for 2-3 minutes, then flip the steak and cook for another 2-3 minutes. Take the steak off heat and let it rest for 5 minutes before slicing.

5. In a bowl, add noodles, steak, veggies and a drizzle of dijon sesame dressing to enjoy!
